Chocolate Covered Chocolate Cheesecake Rich cheesecake, almost New York style Ron
Ingredients:

1 1/2 c. oreo crumbs
3 Tbsp. butter, melted

3 pkgs (8 oz each) cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
3 eggs
8 oz. chocolate, melted

1 c. heavy cream
2 Tbsp. butter
2 Tbsp. sugar
12 oz. semisweet chocolate bits or chips

Preparation:

Heat oven to 350.

Mix crumbs and butter and press onto bottom of 9-inch springform pan. Bake for 10 minutes.

Beat cream cheese, sugar, and vanilla until well blended. Add eggs, one at a time, mixing well after each. Blend in melted chocolate and pour over crust.

Bake 40 minutes, turn oven off and let cake cool inside the oven. Loosen cake from the pan and cool completely. Chill for at leat 4 hours.

Heat heavy cream, butter, and sugar over midium heat. Stir to disolve sugar crystals and bring to a boil. Put chocolate pieces into a bowl and pour mixture over it. Let stand a few minutes and then stir until smooth. Let cool 10 minutes before spreading over cake.

Chill at least 2 hours to set.
