Chunky Potato Soup Creamy chunky potato soup Barb Holt
Ingredients:

6 medium to large potatoes
2 medium onions
6 tablespoons butter
8 tablespoons flower
4 cups milk
1 teaspoon sugar
16 oz cubed cooked ham
Pepper
Green onion

Preparation:

Peel potatoes and cut into 1" cubes
Bring potatoes to a boil, cook until tender. Drain, reserving 2 cups liquid. Set aside.
Peel and chop onion. Melt butter in large soup pot; cook, stirring frequently until onion is translucent and tender, but not brown
Add flour to pot with onions; season with pepper to taste. Cook 3 to 4 minutes.
Gradually add potatoes, reserved 2 cups of water, milk and sugar. Stir well, add ham. Simmer over low heat for 30 minutes stirring frequently.
