| Ingredients: 1 t Olive Oil
1 c chopped onion
1/2 c chopped celery
1 T tomato paste
1 t dried basil
dash of ground red pepper
4 cloves minced garlic
2 (14.5 oz) cans stewed tomatoes
6 oz andouille sausage, cut into 1/4 inch slices
3 c cooked rice
8 oz peeled and deveined shrimp
12 oz chicken breast, cubed

| Preparation: Heat oil in a dutch oven over medium heat. Add onion, celery and chicken, cook until chicked is no longer pink.
Add tomato paste, basil, pepper, garlic, stewed tomatoes and sausage. Cook until heated through.
Stir in rice and shrimp. Cook 6 minutes, or until shrimp are done.
