Giblet soup To be used in stuffing. Sometimes I buy additional necks if we're having a large crowd. All ingredients are approximate. Mom
Ingredients:

2 quarts water
neck, heart, & gizzard from turkey
2 medium onions, diced
2 ribs celery, diced
1 tablespoon coarse salt
1/2 teaspoon pepper
1 clove garlic (or equivalent)
1/2 teaspoon rosemary
1/2 teaspoon celery seed
1/2 teaspoon mustard seed

Preparation:

Bring water and giblets to a boil while watching. Skim foam off as it forms. Once foam is removed, reduce heat and add other ingredients. Let mixture simmer 2 to 3 hours - until giblets are tender. Season to taste. Remove giblets and refrigerate soup until ready to use in stuffing.
